Learn how to mix colors, decorate cakes with equipment bags and tips, edges, tissues and figures of flowers and much more. At every level, recipe information and tips will be shared on homemade pastries and fillings for cakes with seasonal fresh fruit. Each level is more advanced and intense, this class needs to be started from the first level. The first day of every level will be an overview and orientation. It is required that each student bake their cake before class. At the end of each level, you will receive a certificate of completion.

Health Career Pathways
This is a great opportunity while you are enrolled in your HSE/diploma program to get your foot in the door at Cabrillo College. Cabrillo College offers courses for careers in the Health Fields that have lucrative pay and are meaningful fields for the community. These include Medical Assistant, (a 3 semester course). Radiologic Technology, Dental Assistant, Nursing and a free certificated class that includes an internship for working as an administrative assistant in a dental office. There will be guest speakers and a tour of the Cabrillo College state of the art health facilities where you will be taking your health career classes. When you obtain your diploma or HSE from Watsonville/Aptos/Santa Cruz Adult Education at graduation you will also receive a certificate of completion for Health Career Pathways.

Upon successful completion of 58 hours of combines theory, lab skills and supervised clinical acute care experience, students earn a Certificate of Competency, as an Acute Care Certified Nursing Assistant. Certified Nurse Assistant I Program
This program trains students to work as a Certified Nurse Assistant for a skilled nursing facility using the American Red Cross CNA test. Instructor will register and schedule test. Clinical Medical Assistant Program - 140 classroom Hours + A Clinical Externship
This program is intended for students who want to prepare for an exciting, challenging and rewarding career in healthcare. This program will train students to assist physicians by performing functions related to the clinical responsibilities of a medical office. Instruction includes among other things preparing patients for examination and treatment, routine laboratory procedures, diagnostic testing, technical aspects of phlebotomy and the cardiac life cycle. Students will review important topics including phlebotomy, pharmacology, the proper use and administration of medications, taking and documenting vital signs, cardiology including proper lead placements, a professional workplace behavior, ethics and the legal aspects of healthcare. This program includes 140 hours of classroom lecture and hands on labs and a clinical externship opportunity at a local healthcare provider. To be eligible for the clinical rotation, students must successfully complete the 140 hour program, submit to a thorough background check, drug screening and meet other requirements. Note: Upon successful completion of the program, students will be eligible to sit for the National Healthcareer Association (NHA) Certified Clinical Medical Assistant (CCMA) national examination.

EKG Technician Certification Program
This comprehensive 50 hour EKG Technician Certification Program prepares students to function as EKG Technicians and to take the ASPT - Electrocardiograph (EKG) Technician exam. This course will include important practice and background information on anatomy and physiology of the heart, medical disease processes, medical terminology, medical ethics, legal aspects of patient contact, electrocardiography and stress testing. Additionally, students will practice with EKG equipment and perform hands on labs including introduction to the function and proper use of the EKG machine, the normal anatomy of the chest wall for proper lead placement, 12-lead placement and other clinical practices.

Pharmacy Technician Program
This comprehensive 50 hour program will prepare students to work as a pharmacy technician in a retail or other pharmacy setting and to take the Pharmacy Technician Certification Board’s PTCB exam. Course content includes: pharmacy medical terminology, the history of pharmacy, the pharmacy practice in multiple environments, pharmacy calculations and measurements, reading and interpreting prescriptions and defining drugs by generic and brand names. Through classroom lecture and hands on labs, students will review dosage calculations, drug classification, “the top 200 drugs”, I.V. flow rates, sterile compounding, dose conversions, aseptic technique, the handling of sterile products, total parental nutrition (TPN), dispersing of prescriptions, inventory control and billing and reimbursement. Restorative Nurse Assistant
Upon successful completion of 16 hours of theory and written tests, lab skills and a field trip to Watsonville Hospital Physical Therapy Department, students earn a Certificate of Competency as a Certified Restorative Nurse Assistant. This allows the student to work with the physical and/or occupational therapist in the skilled nursing home. An RNA's job provides: exercise and encoragement to the residents as they learn to perform their own ADL's. Students must be current state certified licensed nursing assistants or currently enrolled in WASCAE's Certified Nurse Assistant I Program.
